Chocolate afternoon tea is familiar territory. Cocoa, alongside foie gras, seafood, and pork? Less so.

Sofitel Singapore City Centre and Valrhona — a specialist supplier of high-end chocolate to pastry chefs and chocolatiers — will serve Chocolat: A Cocoa Ritual Afternoon Tea at 1864 from 15 July to 30 September 2026, from 2 pm to 5 pm. The SGD 68++ set comprises five sweets, five savouries and two cocoa-inspired drinks, with a minimum of two diners.

The sweets include Matcha Chocolate Mousseline with ginger and pickled pear; Chocolate Choux with Dulcey 35% Chantilly, hazelnut praline and sesame feuilletine; and Chocolate Roulade pairing Guanaja 70% dark chocolate with TWG 1837 Black Tea.

The savoury half carries cocoa into Madeira-cured foie gras with quince jelly, a crustacean roll with Valrhona Yuzu Inspiration and lemon confit, and Braised Pork with Black Pepper & Mocha Emulsion, served with a Guanaja 70% mole sauce.

Also on the menu:

  • Ivoire Chocolate Crémeux with passionfruit and pineapple
  • Cocoa Pod Chocolate Indulgence with Abinao 85% dark chocolate, white miso sabayon and olive madeleine
  • Balik Salmon with horseradish, blini and trout roe
  • Crispy Kataifi with Parma ham, pistachio, milk veil and Parmesan

The Crimson Elixir combines TWG Red of Africa Tea, cacao syrup and lemon juice, while the Osmanthus Chocolate Elixir contains spiced rum, white crème de cacao and osmanthus honey.
